Let's list them and see.
There's bamboo shoots,

Bok choy,
Broccoli,
And the brussel sprout.
All supercharged with nutrition,
No doubt.
Next is the letter C.
So many healthy choices,
Wouldn't you agree?
There's cabbage,
Carrots,
Cauliflower,
Celery,
Chicory,
Collard greens,
And corn.
So many delicious vegetables to dress up and adorn.
Next we have the letter D.

Let me see.
There's the daikon radish,
Dachin,
And dinosaur kale.
Some delicious options without fail.
Let's move to the next letter E.
Seems like I can only come up with three.
There's edamame,
Eggplant,
And endive.
That's all the E vegetables I can conceive.

How many are there?

And green onions as well.
Wonderful vegetables filled with aromatic smells.
On to H,
The next letter.

Heart of palm,

The next letter is I,
And I can only think of one.
Iceberg lettuce is sure to pack some crisp and crunchy fun.

There's a few that will suit.
There's jalapeno pepper and jicama root.
Moving on to the letter K.
So many new vegetables still to learn about today.
There's kabocha squash,
Kale,
And kelp.

Next up is the letter L.

And I'm sure the leafy green named lettuce rings a bell.
On to the letter M.

Whether root or stem.

And the mustard green.
Delicious fuel to keep us feeling healthy and clean.
The next letter N has only three that I can find.
Napa cabbage,

And nori are the three that come to mind.

That's the only two that I know.

I can't think of any.

Sweet potato,
And swiss chard too.

Which is T?
One is taro,
Two is turmeric,
And the turnip makes three.
The letter U offers some unique vegetables to address.
There's ube,
Uycos,
And the antioxidant-rich upland cress.
The next letter is V.
The vedalia onion is the only name that comes to me.
On to the next letter W.
There's water chestnut,
Watercress,
Wheatgrass,
And wild leeks too.
I can't think of any vegetables that start with an X.
